Wholemeal Banana/Lemon Cake

i must confess...
this recipe has always been a success,
& being one of my best,
on the wholemeal congress!









or better yet..bake them in cute little squares:


sold them at a charity bake sale 

Wholemeal Banana Cake

Makes 16 squares

Ingredients
- 3 eggs
- 165g sugar
- 160g wholemeal flour
- 1 1/2 + 3/4 teaspoons baking powder
- 85ml grapeseed/olive oil
- 225g (~3 medium) super ripe bananas, mashed
- 1/2 banana, sliced thinly (top)

Methods
1. Preheat oven to 160 degree C. 
2. In a large bowl, beat eggs and sugar until light, frothy and pale.
3. Sieve in the flour and baking powder, folding it into the mixture.
4. Beat in the oil and mashed bananas until well combined.
5. Divide the mixture according to the tins (~1/3 cup batter per tin).
6. Top with sliced bananas.
7. Bake for 30 - 35 minutes or until nicely browned.
8. Allow to cool in tin for 10 minutes before transferring to a wire rack.

Wholemeal Meyer Lemon Peel Cake

Makes 12 squares

Ingredients
- 3 eggs
- 165g sugar
- 160g wholemeal flour
- 1 1/2 + 3/4 teaspoons baking powder
- 85ml grapeseed/olive oil
- 2 teaspoons candied meyer lemon peels
- 50ml low fat milk or more (add teaspoon by teaspoon) if batter is too stiff

Methods
1. Preheat oven to 160 degree C. 
2. In a large bowl, beat eggs and sugar until light, frothy and pale.
3. Sieve in the flour and baking powder, folding it into the mixture.
4. Beat in the oil until well combined, stirring in the lemon peel.
5. Divide the mixture according to the tins (~1/3 cup batter per tin).
6. Bake for 30 - 35 minutes or until nicely browned.
7. Allow to cool in tin for 10 minutes before transferring to a wire rack.

How was it?
Lovely! Usually cakes baked with wholemeal flour tend to be hard and compact but this.is.wow. The texture is light and soft..you'd barely notice the whole-grains unless you bite onto a grain. Well of course the eggs and baking powder helped with the fluffy texture. To top it all, these cakes are baked with healthier grapeseed/olive oil, it's a keeper!
