Bailey's Tiramisu

Dear Tiramisu,
delicious & true,
oozing a strong coffee brew!
another keeper on the menu,
& a recipe for you to persue!
















Serves at least 45 tiny portions of tiramisu

Ingredients
- 250g sponge fingers (savoiardi biscuits)
- 250g mascarpone cheese, left in room temperature for 20 minutes
- 150ml pouring/whipping cream
- 1/2 cup strong coffee (1/2 cup hot water + 3 teaspoons coffee ground), cooled
- 1/2 cup bailey's irish cream or any other sweet liquor
- generous dusting of cocoa

Methods

no baking required, just pure fun in assembling & getting a really yummy sweet treat!

1. Get ready a 20cm long rectangular baking dish or equivalent.
2. In a bowl, whisk the cream until whipped cream forms. 
3. Gently fold the mascarpone cheese into the cream and whisk for another 15 - 30 seconds. 
4. Combine the coffee and bailey's, mix well in a bowl.
5. Dunk the sponge fingers briefly in the coffee mixture and line the base of the dish. 
6. Spoon 1/2 the cream over and dust generously with cocoa.
7. Repeat with another layer of coffee-soaked lady's fingers, followed by cream and then cocoa again.
8. Cling-wrap and chill the tiramisu for at least 24 hours.

LOVE IT. it's such a simple recipe that you can whip up quickly and make days before a potluck party or if you're having guests over. the coffee taste gives your tastebuds a punch! & the sweetness from the bailey's and sponge fingers complements the bitterness of the cocoa really well. it's a delicious piece of sweet treat.
