Cornflake Chicken Munchie

oh my my,
what do I spy?
chicken munchies that smell so fine...
& so addictive they'll blow your mind...
now don't be shy,
check out this lovely recipe & give it a try!

Serves a mini party for 4

Ingredients
- 3 pieces of chicken breast (520g), sliced into bite-sized pieces (I had mine in chunks of strips)
- 3 cups cornflakes, crushed
- 2 cups panko breadcrumbs
- 1 teaspon of Mrs Dash
- 1/2 teaspoon basil, dried
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon paprika
- generous dashes of togarashi
- 2 eggs, beaten
- soyabean oil (spray)

Methods
1. Preheat oven to 200 degree C and grease a baking tray with oil spray.
2. Mix the cornflakes, panko, Mrs Dash, basil, salt, pepper, paprika and togarashi in a wide plate.
3. Dip the chicken into the beaten eggs, shaking away the excess and press the chicken into the crumb mixture, coating well.
4. Arrange the chicken on the baking tray and spray some oil over.
5. Bake for 6-8 minutes on one side, flip over and bake for another 10 minutes or until the chicken is golden brown and crisp.

Enjoy it with sweet chilli sauce!

How was it?
SO GOOD. tasty. addictive. the chicken breast was hard..solid meat, yums. i attempted deep-frying some as well, my very first attempt - the chicken were definitely much juicier but the deep-frying stunk up my house so no...am not a fan of the deep fried ones.

Better it up!
cut the chicken into cubes or if you prefer strips, pound the raw chicken breast to tenderize it. for this recipe I had quite a bit of crumbs left, so I'll suggest to use 4 chicken breast and reduce the panko to 1 cup.
