Macaroni Arrabbiata

it has been almost 3 months since my last post,
talk about procrastination overdosed...
i've been caught up working towards my post-grad diploma, 
& am surprised it hasn't caused a coma (kidding)!
here's sharing a really good pasta recipe..
do try it out & maybe you'll agree with me!


Serves 5

Ingredients
- 300 to 350g raw macaroni (or any pasta of your choice)
- 1 can (400g) chopped tomatoes
- 1 can (170g) tomato paste
- A generous handful (~170g) cherry tomatoes, washed & halved
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 1 whole garlic, chopped
- 1/2 teaspoon chilli flakes or 5 chilli padi (sliced)
- 3 teaspoons dried basil
- 1 pinch sugar
- black pepper to taste
- grated Parmesan cheese to sprinkle over the top

Methods
1. Saute the onions and garlic in olive oil till fragrant and soft.
2. Add tomatoes, tomato paste, chilli flakes/chilli padi, dried basil and sugar. Give it good mix.
3. Season with black pepper or salt if you must. 
4. Allow to simmer for 10 minutes over low heat, stirring every 30 seconds.

5. Bring a pot of water to boil, add generous amount of olive oil and generous pinches of salt in the water before throwing in the pasta: cook the pasta for 7 - 8 minutes (according the package or until al dente). DO NOT DRAIN THE PASTA, draining it will remove the starch from the pasta. Instead, use a slotted ladle to remove the pasta before adding it to the cooked sauce. This way, some moisture will be retained & prevents your pasta from drying out.

6. Mix the pasta and sauce well in a serving dish and sprinkle over some grated parmesan cheese.
