Blood Orange Marbled Cake


despite the crazy mugging,
my sanity needed some baking.
so last week i managed to bake,
this really good butter cake. 
sharing this recipe with you,
may you enjoy it with a good brew!






Makes one 8-inch square cake (16 portions or so)

Ingredients
- 250g butter, softened
- 250g sugar
- 4 eggs
- 75ml orange juice (i used blood orange)
- zest of 1 orange
- 250g self-raising flour, sifted
- 30g ground almond
- 1/2 teaspoon baking powder
- 1 tablespoon cocoa (for the marble design)

Methods
1. Preheat oven to 160 dc, grease and flour an 8-inch square tin.
2. Cream butter and sugar until light and fluffy.
3. Add in the eggs, one at a time, beating until creamy and light.
4. Beat in the orange juice and zest until well-combined.
5. Fold in the sifted flour, ground almond and baking powder until well-combined.
6. Remove about 3 tablespoons of batter and mix with 1 tablespoon cocoa in a bowl.
7. Place this brown batter in a piping bag (i used a ziplock and snip a hole at one end).
8. Fill the baking tin with the white cake batter and smooth the top.
9. Pipe checkered lines of the brown batter on the white cake batter and use a toothpick to do crazy swirls all over it until you get a marbled effect.
10. Bake for 45 minutes or until a skewer comes out clean.
11. Allow to cool completely on a wire rack before slicing.
