Summer Berries & Apple Cake


 
 apples & summer berries,
in a fluffy cake like this,
is the perfect thing to have at picnic parties.


 




Makes one eight-inch cake

Ingredients
- 225g self-raising flour
- 165g sugar
- 125g butter, softened
- 1 teaspoon vanilla essence
- 2 eggs
- 125ml greek yogurt
- 50 ml low fat milk
- 1 apple, cored and sliced thinly (green apples will give you a more tartsy cake, while the red are just..prettier so do not remove the skin!)
- 75g blueberries
- 75g strawberries, sliced thinly
- cinnamon & 2 tablespoons sugar, to dust

Methods
1. Preheat oven to 180 degree C, grease and flour an eight-inch round tin.
2. Cream the butter until smooth, add the sugar and cream until fluffy.
3. Beat in the eggs and vanilla gradually before adding the yogurt and beating until smooth.

at this point, my batter was pretty thick so I added 50ml of milk.

4. Fold in the flour and give the mixture a good 30 second beat until it's creamy & fluffy.
5. Pour 1/2 batter into the tin and smooth it out.
6. Sprinkle 1/2 mixture of all three fruits and dust with cinnamon.
7. Top with the remaining batter and smooth the top.
8. Sprinkle the remaining fruits over the top evenly dust with cinnamon.
9. Finally sprinkle the sugar over and bake for 50 minutes or until a skewer comes out clean.
10. Cool in tin for 5 - 7 minutes before turning out onto a wire rack.

How was it?
SO DELICIOUS. the cake was light & fluffy..not too sweet but blended well with all the tarsty flavours of the fruits and cinnamon. I truly love this.

Better it up!
Mix in 1 teaspoon of cinnamon into the batter instead of dusting over, you'll get a prettier cake with more vibrant colours from the summer fruits.
