Wholemeal Vanilla M&M Cookies

everyone loves a cookie.
it's perfect for breakfast or tea...
or anywhere really.
a cookie brings glee,
like honey to the bee,
wouldnt you agree?




you know what they say....everything in moderation. 


Makes 27 cookies

Ingredients
- 190g wholemeal flour
- 2 teaspoons corn starch
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- dash of cinammon powder
- 155ml soyabean oil
- 170g sugar
- 2 eggs
- 3/4 tablespoon vanilla extract
- 260g oats (i used a mixture of rolled oats & instant oats)
- 2/3 cup M&Ms (mine were the raspberry ones)
- 55g dark chocolate chips

Methods
1. Preheat oven to 175 degree C and line a tray.
2. Mix the flour, corn starch, baking powder, cinammon and salt in a bowl until well combined.
3. In another large bowl, pour in the oil.
4. Whisk in the sugar, eggs and vanilla.
5. Stir in the flour mixture until well combined.
6. Stir in the oats, M&Ms and chocolate chips thoroughly.
7. Form the dough into balls (2 tablespoons of dough per ball) and press each ball into a cookie shape on the lining paper. The dough will not spread very much so go ahead and place them as close as possible, for baking.
8. Bake for 10 - 12 minutes until slightly browned. 

enjoy a cookie with a glass of milk!

How was it?
slightly chewy & really yummy. & it's packed full of whole-grains..makes you feel better about eating them!

  2. hi cynthia, you may use any other healthier oil such as sunflower or grapeseed oil, these oil can withstand pretty high temperatures (up to 220dc).
