Dark Chocolate Tart

this is a delicious dark chocolate tart,
that will win over your taste bud,
and your heart.





Makes approximately 10 slices

Ingredients
- 250g plain flour
- 125g cold butter (for pastry), cut into cubes
-  90g sugar
- 1 egg, beaten
- 370g dark chocolate (70%), broken to smaller pieces
- 400ml double cream
- 25ml honey
- 85g butter (for filling)
- 2 teaspoons orange zest 

Methods
1. Rub the cold butter into the flour until the mixture resembles breadcrumbs.
2. Stir in sugar and egg.
3. Knead gently until the whole mixture forms a soft dough ball.
4. Chill for 1 hour in a cling wrap.
5. Roll the dough out on a lightly floured surface to the thickness of a coin.
6. Lay over a 24cm round tart tin and gently press into the edges, trimming off the excess  and chill for 15 minutes. *at this point in time, preheat the oven at 180 dc
7. Blind bake for 20 minutes and cool on a wire rack.
8. Combine chocolate, butter and honey in a large bowl and pour the heated cream (almost boiling) over, stirring to melt everything. Final mixture should be glossy and thick.
9. Pour the mixture in the cooled tart and smooth it out.
10. Chill for 3 - 4 hours. 
11. Decorate with chocolate chips/nibs and slice with a hot knife to serve.

How was it?
A rich chocolate filling with a sweet pastry crust. Be mindful not to roll the pie crust too thin (like we did), for each bite to have that balance of the tart and chocolate.
