Banana Bread & Butter Pudding

never was i a fan of bread & butter pudding,
until i made this delicious thing. 







Makes one 9.5 inch round pudding, serves approximately 8 

Ingredients
- 40g butter
- 9 slices wholemeal bread (i used a frozen stash, great way to use up unfinished bread)
- 2 cups low fat milk
- 3 eggs
- 2 tablespoons pure maple syrup
- 1 teaspoon cinnamon powder
- 1 teaspoon brandy
- 2 small banana, thinly sliced

Methods
1. Preheat oven to 175 degree C.
2. Spread butter on both sides of bread and cut each slice of buttered bread into halve (triangle).
3. Whisk milk, eggs, maple, cinnamon and brandy.
4. Laver bread over the dish and top with bananas.
5. Pour over the milk mixture and allow to sit for 10 minutes - which I forgot -
6. Bake for 45 - 50 minutes until puffed and golden brown.

How was it?
Tasted great, especially warm with vanilla ice cream - a crisp outer crust with moist pudding texture on the inside. Disappointly there was no taste of brandy !

Better it up
Drizzle 2 teaspoons of brandy immediately after removing from oven.
