Earl Grey Lemon Teacake

teacakes are always a delight,
that never fail to excite!
almost like flying a kite..
well these will taste just right,
with a cuppa black tea in sight..
& I promise you'll enjoy every bite!





Makes a loaf of approximately 10 - 12 slices


Ingredients (cake)

- 120ml low fat milk, heated in the microwave for 1-2 minutes on high
- 4 bags of earl grey tea 
- 115g butter softened
- 45ml pure maple syrup
- 110g sugar
- 2 eggs
- 150g plain flour
- 40g wholemeal flour
- dash of salt
- 1 teaspoon baking powder
- zest of 1 lemon
- 1/2 teaspoon lemon essence

Ingredients (lemon syrup)

- 3 tablespoons icing sugar
- 1 tablespoon honey
- 1/4 cup hot water
- 3 tablespoons lemon juice

Methods (cake)

1. Preheat oven at 160 degree C and grease/line a 9" by 5" loaf pan.
2. Steep 2 bags of earl grey tea in the hot milk for 30 minutes; thenafter squeezing the bags to get every earl grey oomph out.
3. Cream the butter till smooth and fluffy before adding maple syrup and sugar, beating till combined.
4. Beat in the eggs, one at a time.
5. Sift the flour, salt and baking powder, beating into the butter mixture.
6. Stir in the lemon zest, remaining 2 bags of earl grey tea dust and lemon essence. 
7. Pour the batter into the tin and bake for 1 hour. Cool for 10 minutes in pan before transferring to wire rack.

Methods (lemon syrup)

1. Stir all ingredients together and brush on cake while it is still hot/warm. 

Keep the remaining syrup for pancakes/waffles/tea.


How was it?

yum...it's bursting with flavours! love love the earl grey and lemon combo. you may add more earl grey if you'd like. a little bit dry in texture but i'm not complaining, the taste is good. goes great with plain tea or coffee.

Better it up!

increase butter to 150g or add 40ml extra light olive oil/soybean oil.
