Blueberry Vanilla Chia Seed Pudding

it's late,
& it's hard to think straight,
so here's a quick update,
of what I ate....
a chia seed pudding that's pretty great.


Serves 1 in a 500ml jar

Ingredients 


Blueberry Layer

- 1 cup blueberries (fresh or frozen, i used the frozen ones)
- 1/2 cup low fat milk
- 1 tablespoon chia seeds

Vanilla Layer
- 1/2 cup low fat milk
- 1 tablespoon greek yogurt
- 1 teaspoon vanilla extract
- 1 tablespoon + 2 teaspoon chia seeds

Methods

1. Whizz everything in the blueberry layer (you will get a slushy mixture) and pour into the base of a 500ml maison jar, cover and chill for at least 2 hours.
2. Stir all ingredients in the vanilla layer well and chill (covered) in a bowl for at least 2 hours till set. If it doesn't set (like mine did), add 2 teaspoons chia seeds, stir and allow to set for another hour or so.
3. Pour the vanilla pudding over the blueberry layer in the 500ml jar.
4. Slice 1 orange into small pieces and top it over the vanilla pudding.
