Apple Cinammon Muffins

this marks the end of my hiatus,
o' thank you Jesus,
for work has been so hectic I've been dreaming of an oasis!
 you must be wondering what's the latest?
well let me introduce you to this muffin that's full of promise,
one with a taste of greatness,
& one day this could really be famous. 








Makes 10 muffins


Ingredients (muffin)

- 210g plain flour
- 40g wholemeal flour 
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/2 ground cinammon
- 100g sugar
- 1 egg
- 150ml low fat milk
- 90g unsalted butter, melted
- 110g apple, cut to small chunks (with skin on), ~1 royal gala apple

Ingredients (quick streusel topping)

- 25g rolled oats
- 20g unsalted butter, melted
- 6g dark brown sugar

Methods

1. Preheat oven to 200 degree C.
2. Sieve flour, baking powder, salt and cinammon into a bowl.
3. Stir in sugar. 
4. Beat the egg, milk and melted butter in a bowl and stir this mixture into the flour mixture until well-combined.
5. Fold in the apple chunks.
6. Divide the mixture into 10 muffin cups (lined/non-stick).
7. Mix all the streusel ingredients together and sprinkle evenly over the 10 muffin batter.
8. Bake for 20 - 25 minutes until browned.

How was it?

A pretty wholesome muffin filled with apples and a tinge of wholemeal. Muffins rose high and had a great fluffy cakey inside. The streusel on top makes it purfect with that extra crunch. Surprisingly I thought the muffins could do with a little more sweetness. 

Better it up!

Increase the apples to 180g (as per the original recipe), for a little more natural sweetness. Could push just a wee bit more for the wholemeal flour, perhaps a 180g plain flour + 70g wholemeal flour.
