Apple Tarte Tartin from the Rice Cooker

"this is a first for apple tarte tartin!"
says I - with a sheepish grin,
question is what was it baked in?
if you've guessed rice cooker - you win!
it's a classy bake with a fuss-free spin...
& you can have this without feeling the usual sweet treat sin!








Serves 6 

Ingredients
- 3 small apples (300g), core removed and de-seeded 
- 1 tablespoon butter
- 1 tablespoon dark brown sugar
- 2 eggs
- 3 tablespoons grapeseed oil
- 50g white sugar
- 60g plain flour, sieved
- 10g instant oats
- 1 teaspoon baking powder
- pinch of salt

Methods
1. Mix the apples, butter and dark brown sugar in a bowl and microwave on high for 1 minute.
2. Stir to coat and microwave for another 1 - 2 minutes until the apples start to smell oh-so-heavenly fruity. 
3. In another bowl, whisk the eggs, oil and sugar together. 
4. Whisk in the flour, oats, baking powder and salt.
5. Line the buttered apples at the bottom of the rice cooker and pour the batter over.
6. "Bake"/Cook for 20 minutes before transferring to a wire rack to cool. 

How was it?
baked apples taste so good, naturally sweet with a slight tangy tinge..complementing the milder taste of the plain oat cake. the cake was pretty dense but for a quickie sweet treat like this, I wouldnt complain!

Better it up!
for step 4, do this instead - in another bowl, whisk the eggs until pale and frothy, add in the sugar and whisk till thick and creamy before whisking in the oil (this creates more air trapped in the batter and it should create a flufflier and lighter cake). use cake flour instead for a lighter cake. play around with other fruits such as peaches, nectarines and even plums!
