Orange-Oomph Cuppycakes

with the itch to bake, 
something orangey & something of a cake,
this recipe was tweaked for a remake, 
& out comes a delicious sweet treat for teabreak!





replacing some butter with non-fat yogurt, it works, yay!

Makes 12 + 1 (smaller)

Ingredients
- Plain flour, 175g
- Wholemeal flour, gritty, 25g
- Baking powder, 1/4 teaspoon
- Milk powder, low-fat, 1/2 tablespoon
- 205g butter, softened
- Yogurt, non-fat, 50g (preferably plain but I only had strawberry-flavoured one with me so here you go)
- Eggs, 5
- Sugar, 170g
- Orange juice, 2 tablespoons
- Zest of 1 orange
- Orange coloring, a few drops  1/8 teaspoon (if you'd like)

Methods
1. Preheat oven to 190 degree C and line/grease 12 + 1 muffin holes. 
2. Cream butter and yogurt until smooth. 
3. Sift in the plain flour, baking powder and milk powder.
4. Stir in the wholemeal flour until well-combined.
5. Beat/whisk the eggs until foamy, add the sugar and beat till light and thick.
6. Add in the orange juice & zest to the egg mixture and whisk until well-combined. 
7. Pour the egg mixture into the creamed mixture and beat until smooth. 
8. Fill each muffin hole until almost full and make sure the batter is (relatively) flat for even baking.
9. Bake for 20 minutes and immediately cool the cuppycakes on a wire rack. 

if you want an orange swirl/shade/portion for your cupcakes, do this:
take 1/4 of the batter out into another bowl and stir in the orange colouring. alternate the batter when filling the muffin holes or fill the muffin holes 3/4 full with the plain batter and top until almost full with the orange-colored batter. (mine didn't turn out as orange as I'd like it to be so I'll suggest 1/8 teaspoon of colouring instead of just a few drops). 

How was it?
YUMMY. this recipe is a twist of a butter cake recipe...but i replaced some butter with yogurt and added a dash of wholemeal flour. the cake was pleasantly sweet with some grits in between bites (wholemeal flour), love it. texture was good - crumbly and cakey. & the kick from these cuppycakes is from the...as the name ..oomph of the orange. it's a pretty hearty cake..so if you'd like something lighter, fill the muffin holes till 3/4 full instead & you'd be able to make more of these as well. 

spread some chocolate ganache (recipe in Sour Cream Chocolate Cake) on the top but these cuppycakes are good enough to eat on its own.
