Fluffy Earl Grey Scones

this isn't your average scone,
made with no butter and spiced with an earl grey tone,
it's a simple whip-up that taste pretty good alone...
& easy enough for you to bake your own!

enjoy with fresh fruits, Earl Grey Whipped Cream, jam and a cup of Earl Grey tea












Makes 12 scones


Ingredients
- 450g self-raising flour
- 2 tablespoon icing sugar
- 200ml whipping cream
- 50ml low fat milk
- 1 packet of Earl Grey tea leaves

Methods

1. Preheat oven to 200 degrees C.
2. Sift flour icing sugar and tea leaves.

3. Add cream and water.
4. Cut the liquid into the flour and fold slightly until well-combined with a spatula.
5. The mixture will be slightly dry so add some milk and continue cutting and folding until well-mixed.
6. With lightly floured hands, knead the dough in the bowl lightly until smooth and slightly springy.
7. Pat the dough into a rectangular (abt 2cm thick) on a lined baking tray.
8. Dust the spatula with flour and cut the rectangular dough into 12 pieces, seperating each piece slighly.
9. Brush with milk and bake for 15 – 17 mins or until golden brown.
10. Allow to cool on a wire rack.

Earl Grey Whipped Cream: beat 100ml whipped cream until soft peaks before adding ¼ pack earl grey tea leaves and beat until stiff peaks form. 

How was it?
like the name of this bake suggests...these scones turned out nice, fluffy and slightly bread-like. could have more flavour. a pretty easy bake.

Better it up! 
add a pinch of salt and/or some dried cranberries to scones, may want to drizzle some glaze over as well. to whip up earl grey chantilly cream instead.
