Banana & Chips Loaf


a good way to use up bananas that are too ripe..

instead of chocolate chips, you may replace it with nuts instead. 



tap the excess flour into the sink

sieve the dry mixture, stir in the chocolate chips and create a well in the center

beat the eggs, mash the bananas and combine the 2

zest & juice of 1 lemon

add the lemon zest, oil, sugars & lemon juice into the egg mixture

pour 3/4 of the egg mixture into the 'well', stir well
pour the remaining mixture and stir until just combined
pour the batter into the tin until 1/2 full & bake away !

the baked loaves !




Makes 2 x 450g loaf tins

Ingredients
-          Plain flour, 375g
-          Baking powder 2 teaspoons
-          Cinammon, 2 teaspoons
-          Salt, a pinch
-          Eggs, 3
-          Bananas, 3 ripe, peeled, chopped
-          Lemon juice, 1 lemon’s
-          Lemon zest, 1 lemon’s
-          Oil, soyabean, 125ml
-          Sugar, white, 150g
-          Sugar, brown, 50g
-          Vanilla, 2 teaspoons
-          Chocolate chips, semi-sweet, 125g

Methods
  1. Preheat oven to 180ºC.
  2. Grease a loaf tin thoroughly with butter and sprinkle 2-3 tablespoons of flour into the tin, turning to coat.
  3. Tap the tin to remove excess flour.
  4. Sift the flour, baking powder, cinnamon and salt in a large bowl.
  5. Stir in the chocolate chips.
  6. Make a well in the center of the flour mixture and set aside.
  7. Beat the eggs in another large bowl with a fork.
  8. Mash the bananas in another bowl with a fork until a paste forms.
  9. Stir the bananas into the egg mixture, add the lemon zest and mix well.
  10. Add the oil, white and brown sugar, vanilla and lemon juice to the egg mixture, stir well.
  11. Pour ¾ of the banana mixture into the ‘well’, stirring well.
  12. Add the remaining banana mixture and stir until just combined and smooth (over mixing will give you a tough loaf).
  13. Spoon the batter into the loaf tin until half full.
  14. Bake for 35 – 40 minutes or until loaf shrinks away from the sides of the tin and a skewer comes out clean.
  15. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to be cooled completely.
  16. Slice and serve. 
How was it?
a little denser than it should be.

Better it up!
the original recipe called for bread flour, but I ran out of it so I thought I'd use plain flour instead. try out this recipe with bread flour. the sugar has been reduced from the original as well, so add on another banana to make up for the reduction.
