these Salmon cakes are hot from the oven,
whipped up in an urban kitchen,
to feed some master & maiden(s),
indeed a tasty batch to be eaten!
am bringing these to a birthday party tonight...
a pretty easy recipe to whip up!

chop some lime leaves (these are one of the essence to any thai dishes yumm, they smell too good) |

Ingredients
Salmon Patties
- 3 lime leaves, finely chopped
- 300g salmon, sliced into small pieces (I only had 250g of salmon so replaced the remaining bulk of 50g with Nestum cereals)
- 30g curry paste
- 1 egg
- 1 teaspoon sugar
- 1 1/2 tablespoon soy sauce
- 30g corn flour
- 50g mixed vegetables (i used frozen vegetables and microwave for 30 seconds then mash them briefly with a fork)
Coating
- 1 egg, lightly beaten
- 1/2 cup bread crumbs
- 1/4 cup plain flour
Methods
1. Line a baking tray and grease with oil.
2. Preheat oven to 190 degree celcius.
3. Mix all the ingredients in salmon patties together until well-combined.
4. Divide the mixture into 12 portions and shape into round patties with both hands.
5. Dip each patty into the plain flour, then egg mixture and coat with crumbs.
6. Spray the cakes with oil and bake for 30 minutes.
7. Enjoy it warm with brown rice and steamed vegetables!
The texture is pretty good, semi moist & a little drier on the coating area which is reasonable - but...... it was a little too salty (my threshold for salt is pretty low) so I'd use only 1 tablespoon of soy sauce in the next batch. It is sssspicy woohoo! If you like it spicier, please, thrown in more chilli powder or (gasps) chilli padi !
I love this recipe...shall cook it with my air fryer next time, we'll see how that goes !
