Ingredients (meal)
- 1 cup raw fine multigrain rice (cooked with 1 3/4 cups water in the rice cooker)
- 4 small sweet potatoes (560g), peeled and cut into 1cm chunks
- 1 medium broccoli (400g), cut into bite-size florets
- 2 tablespoons oil (i use grapeseed)
- 1/4 teaspoon salt (i used pink himalayan)
- 1 teaspoon togarashi (Japanese chilli powder)
- 1 teaspoon black sesame seeds, toasted till fragrant
- 1 teaspoon white sesame seeds, toasted till fragrant
Ingredients (dressing)
- 1/2 teaspoon ginger, minced
- 4 cloves garlic, chopped
- 2 tablespoons miso paste
- 1 tablespoon maple syrup
- 1/4 cup sweet Japanese rice vinegar
- 1 teaspoon sesame oil
- 2 tablespoons + 2 teaspoons grapeseed oil
Methods:
1. Preheat oven to 200 degree C.
2. Line a baking tray with aluminium foil and grease with the oil.
3. Layer the sweet potatoes on the tray and sprinkle with some togarashi and some salt.
4. Roast for 20 minutes until brown underneath before tossing the chunks and adding the broccoli florets to the tray and sprinkle with the remaining togarashi and the remaining salt.
5. Roast for 15 more minutes until broccoli is slightly charred at the edge.
6. In a blender, whizz all the dressing ingredients until smooth.
The Assembly:
drizzle the miso dressing over the sweet potato and broccoli. sprinkle with sesame seeds and serve with the cooked multigrains.
How was it?
YUMMY. packed full with flavours, thank you miso and sesame. this is a really wholesome and tasty meal...one that you would want to go for a 2nd helping!
Better it up!
Look for orange sweet potatoes and use them instead for their vibrant colour. Oh and the dressings was too much..reduce by 1/2 portion or increase the multigrain and vegetables by 2x.
