Fluffy Blueberry & Funfetti Pancakes

all hail pancake!
these fluffy ones are something you'd wanna wake, 
& have with (perhaps) a chocolate milkshake?
yumz.









Sunday's Brunch: (left to right) Fluffy Pancakes, Banana & Orange Smoothie, Scramble Eggs

Makes 10 pancakes

Ingredients
- 200g plain flour
- 25g wholemeal flour
- 1 tablespoon baking powder
- pinch of salt
- 1 teaspoon sugar
- 2 eggs, beaten
- 300ml low fat milk
- 30g butter, melted and cooled
- 1/4 cup dried blueberries, topping
- handful of edible funfetti, topping

Methods
1. Combine and sieve the flour, baking powder, salt and sugar.
2. Make a well in the centre and pour in the eggs, milk and melted butter (the batter will be slightly thick).
3. Heat a pan and cook 1/4 cup batter at a go (swirling into a circle).
4. (Optional) Sprinkle blueberries or funfetti over the top.
5. Once the top of the pancake starts bubbling, flip over and cook for another 45 seconds to 1 minute.

Serve warm.

How was it?
Fluffy and soft. The topping of dried blueberries was a good one, complimented the pancake perfectly.
