Earl Grey & Almond Bear Biscuits

going through the weekday motion,
can be like eggs turning rotten!
the saving grace is always in the kitchen,
where you can wear your apron,
 put on the oven mitten,
& bake bear biscuits in this safe haven.

look up, it's TGIF tomorrow, my fellow men !

Makes 20 bear biscuits

Ingredients
- 100g self-raising flour
- 55g ground almond
- 55ml maple syrup
- a pinch of sea salt
- 25ml grapeseed oil
- a packet of Earl Grey tea leaves

Methods
1. Preheat oven to 160 degree C.
2. Line a baking tray.
3. Sieve flour, almonds and earl grey tea leaves in a bowl and stir to combine.
4. Combine maple syrup, salt and oil in another bowl and stir well.
5. Pour the syrup mixture into the flour mixture and fold to combine.
6. Rub the dough with your fingertips until crumbly.
7. Sandwich dough between baking paper or non-stick baking mat and roll to a 5-mm thickness.
8. Cut out cookies with a 5-cm cookie cutter (mine is the shape of a bear head) & decorate any way you like. i decided to give mine chocolate chip eyes and puncture mouths for the bears with a chopstick.
9. Bake for 15-20 minutes or until firm and browned.
10. Cool on wire rack and store in airtight containers.

Enjoy with a glass of low-fat milk!

How was it?
this is a recipe to keep. it's so simple to do, kids can have fun rolling and cutting out the cookie dough with their favourite cookie cutter.

it is not your average biscuit - the maple syrup used in this recipe gives the biscuit an earthy flavour and believe it or not - gram by gram, maple syrup has less calories than honey! i used Hamptom House 100% Maple Syrup.

instead of butter or vegetable oil (not-so-good oil that is usually palm oil & used in almost all food factories), this recipe uses grapeseed oil, in a relatively small quantity. Grapeseed oil is suitable for baking with its high smoke point and having a neutral flavour, this oil is suitable for bakes such as these bear biscuits so the earl grey flavour can come through stronger.

pleasant with the tinge of earl grey flavour, these biscuits goes pretty well with milk. yummy yummy

Better it up!
have a go at various flavour combination for these biscuits. use this recipe as a basic recipe.
