Earl Grey Muffins

It has been so busy with mister JOB that honestly, I missed my time in the kitchen terribly much.

on this faithful Wednesday, I had the urge to bake.

so I put on my red&white-polka-dots-with-strips apron, googled for a quick Earl Grey Muffin recipe & baked away !

Steep 4 bags of Earl Grey in hot milk

Flour mixture - with a good deal of poppy seeds & earl grey tea leaves

Break 2 eggs and whisk lightly

mix away !

i love how the liquid just flows beautifully into the well of flour 

there you go, Earl Grey batter

fill the tins

fresh out of the oven

enjoy w a cuppa Chamomile 
Makes 12 muffins ( & about 24 if you use tiny muffin cups)

Ingredients
- Earl Grey tea bags, 4 + 1
- Milk, low-fat, 250ml 
- Flour, self-raising, 375g
- Sugar, 150g
- Poppy seeds, 1 tablespoon
- Butter, unsalted, melted, 125g
- Eggs, 2, lightly beaten

Methods
1. Preheat oven to 180 degree celcius. 
2. Line 12 muffin tins.
3. Warm the milk in a saucepan until it is almost boiled (watch your milk to make sure it doesn't curdle).
4. Steep 4 teabags to infuse and let cool.
5. Sift the flour and stir in the sugar, poppy seeds and Earl Grey tea leaves (from the remaining 1 bag).
6. Make a well in the flour mixture and pour in the milk, eggs and melted butter.
7. Stir well to combine (my batter was too dry so I had too add in extra 40ml of milk).
8. Spoon the mixture into the muffin tins till about 2/3 full.
9. Bake for 25 minutes (20 minutes for tiny muffins) or until muffins are golden brown on the top. 
10. Immediately transfer to wire rack to cool.

Enjoy with a cup of tea!

How was it?
rather hard crust-top with a soft crumbly center, surprisingly it doesn't  taste sweet but you can taste a tinge of Earl Grey, which was disappointing especially when 4 teabags was used for the steeping. 

Better it up!
for those with a sweet tooth, you might throw in about 1/4 cup of semi-sweet chocolate chips or dried cranberries/raisins instead of poppy seeds, otherwise for those with a low threshold for sugar, this is great. i love it. also, use 2-3 bags of tea leaves to mix in the flour mixture instead of just 1.
