X'mas Financiers







 It's December again. Another reason to bake. Here's my 1st x'mas bake: green tea & red velvet financiers, it's a twist of the original here.

once again, this recipe ditches the yolks.

clarified butter

red velvet batter: so pretty 

Green Tea Financiers: add 10g green tea powder & sift the flour mix 2x.
Red Velvet Financers: add some red coloring.

into the oven!
mm-hmm.

How was it?
green tea financiers turned out great - cakey & semi-soft. but there wasd a bitter tinge > gotta be from the green tea powder.

red velvet financiers - it turned out w a pretty pink color. but i over-whisked the egg whites, it was overly spongey/fluffy but it still tasted good, buttery & light.
Better it up !
reduce the green tea powder if you'd like & try not to over-whisk the egg mixture; just beat it with a whisk (dont have to use an electronic mixer) till frothy.
