Madeira Cake

Madeira is a spongecake in traditional English cookery.


INGREDIENTS
-          185g unsalted butter, softened
-          170g caster sugar
-          3 eggs, lightly beaten
-          2 teaspoons finely grated orange zest
-          155g self-raising flour, sifted
-          125g plain flour, sifted
-          2 tablespoons milk

METHODS

  1. Preheat oven to 160°C and line a loaf tin (7 x 10 x 20 cm) with baking paper.
  2. Cream butter and sugar in a large bowl till light and fluffy.
  3. Add the egg gradually and beat thoroughly after each addition.
  4. Add orange zest and beat until combined,
  5. Use a metal spoon and fold in the flour and milk.
  6. Stir until smooth and spoon mixture into tin.
  7. Smooth the mixture surface and bake for 70minutes (until skewer comes out clean).
  8. Cool cake in tin for 10minutes before turning out to a wire rack to cool completely.
