INGREDIENTS
120g icing sugar
35g self-raising flour = 35g plain flour + a pinch of baking powder
100g butter, melted
3 egg whites, lightly-beaten
60g almond meals
1 big orange, zest only, finely grated
100g dark chocolate, chopped finely
extra icing sugar to dust
METHODS
1. Preheat oven to 180°C.
2. Get ready 6 friand tins or 1 muffin tray, grease lightly (needless if using nonstick)
3. Sift the icing sugar and flour to a bowl.
4. Add butter, egg whites and almond meal.
5. Stir until just combined.
6. Add zest and chocolate, stir until just combined.
7. Spoon gooey mixture into 6 frand tins or 10 muffin cups - just 1/2 full!
8. Bake for 25 minutes until skewer comes out clean.
9. Remove from oven & let the lovely cups sit for 10 minutes before transferring to wire rack to cool...
10. Sift a little icing sugar and serve. YUM-O
