having a full tub of greek yogurt sitting in the chiller,
a friend's recommendation was the answer!
except that it took forever to cook the cake's centre...
nonetheless it made a decent sweet treat after dinner.
Allie has been sharing with me 'so-denise' recipes & they have been parked under my to-bake list. this is one of them: Chai Latte Yogurt Teacake (except that I use Peach-&-Passionfruit black tea instead of Chai & oh yes I did other tweaks as well......)
Makes 16 squares
Ingredients
- 1 cup greek yogurt
- 2 cups plain flour
- 1 cup nestum (I replaced 1 cup plain flour with nestum)
- 2 bags of peach-&-passionfruit black tea (1 packet to infuse in milk, another to mix in the flour mixture)
- 2 cups sugar
- 2 teaspoons baking powder
- 1 cup milk, heated up and infused with 1 tea bag of peach-&-passionfruit black tea
- 1 cup soybean oil
- a pinch of salt
- 3 eggs
Methods
1. Preheat an oven to 200 degree celcius and grease/line a square (9") baking tin.
2. Mix all the ingredients until well-combined (except eggs).
3. Gradually add in the eggs and continue mixing until well-combined.
4. Pour the batter into the tin and bake for 45 minutes (took me another 1 hour to bake it, the centre was very wet and uncooked).
How was it?
love the taste of the tea, came off strong & the aroma was enticing.... can't say the same for texture; turned out dense and even after the superduper long baking time, it still seemed a little uncooked (i think the culprit was the combination of nestum & yogurt). the cake was overwhelmingly sweet too...tasted like it was baked with a whole packet of sugar. blah.
Better it up!
try this with just plain flour, omit nestum. reduce sugar to 1 1/2 cups + 1/4 cup low-fat milk. reduce the temperature to 170 degree celcius and monitor the baking time, start with 50 - 55 minutes and test if cake is cooked; if it isn't keep baking for 10 minutes interval until a skewer comes out clean from the center.
