Strawberry Madeira Cake

Madeira cakes are plain English cakes that are delicate in texture, they are named as such because they are usually served with Madeira wine.

This was an impulse bake, inspired by random thoughts of my punnet of frozen strawberries chucked in the freeze + my constant craving for tea-infused plain cakes.

this was tweaked from DTLB's Madeira Cake, baked back in July 2011.

hello frozen berries & Lipton Strawberry Tea Leaves


3 eggs, lightly beaten

cream the butter & sugar.
add in the eggs, flour-mix & milk.

fold in the flour & strawberry puree,
pour cake batter into baking tin,
smooth the surface,
dot with some strawberry puree.

such lovely colours, au naturel



Makes 16 Cake Squares

Ingredients
- Butter, unsalted, softened, 185g
- Sugar, 170g
- Eggs, 3, beaten lightly
- Self-raising flour, 155g
- Plain flour, 125g
- Milk, low-fat, 4 tablespoons
- Stawberry tea leaves, 1 bag, 2g
- Strawberries, frozen, 250g (1 punnet, dehulled & puree/blended)

Methods

1. Preheat oven to 160°C and line a tin with baking paper.
2. Sieve the flour and stir in the tea leaves.
3. Cream butter and sugar in a large bowl till light and fluffy.
3. Add the egg gradually and beat thoroughly after each addition.
5. Stir in the milk and fold in the flour.
6. Stir in 100g of strawberry puree, set aside the remaining. 
6. Stir until smooth and spoon mixture into tin.
7. Smooth the mixture surface and dot some strawberry on the top.
8. Use a chopstick to create strawberry swirls on the top of the cake.
9. Bake for 50minutes or until skewer comes out clean.
10.Cool cake in tin for 10minutes before turning out to a wire rack to cool completely.
11. Serve with remaining strawberry puree. 

How was it?

- cake rose well & was light in texture. it had a tinge of strawberry flavour. wasn't sweet - i love it like that. was a tad too dry (my brother said he almost choked at 1st bite, hahaha). best served warm with a cuppa!

Better it up!

- add 1 more bag of strawberry tea leaves.
- add 1/4 cup milk.
- for the sweet tooth...use 185g sugar.
