A birthday cake using the frozen-&-thawed chocolate cake made a week ago from Bailey's Chocolate Cake.
1 punnet of strawberries, sliced |
Plain Stabilized Whipped Cream: whipping cream, 400ml + 1 3/4 tsp gelatin powder |

Spread plain stabilized whipped cream onto the 1st layer of chocolate cake |
Top with sliced strawberries, cream, 2nd layer of chocolate cake, cream, strawberries and cream again |

Ingredients
- From Bailey’s Chocolate Cake recipe
- Strawberries, 1 punnet, sliced
Plain Stabilized Whipped Cream
(filling of cake)
Ingredients
- Whipping cream, 400ml
- Gelatin, 1 ¾ tsp
- Icing Sugar, 20g
Methods
- Using an electronic beater, whip cream and icing sugar until thick.
- Adding the gelatin, little by little, whip until stiff peaks formed.
Sweet Whipped Cream (for the outer
surface of cake)
Ingredients
- Whipping cream, 200g
- Sugar (fine), 15g
- Vanilla essence, ½ tsp
Methods
- Combine all ingredients in a mixing bowl.
- Place bowl over a larger bowl filled with ice cubes and water.
- Using an electric mixer, whip cream at medium speed until stiff peaks formed (cream still remains smooth)*.
* do not over whip or the cream would
be grainy & separate to form butter.
The Assembly
1. Slice each cake into 2, horizontally
(we are using only 3)
2. Lay the base of 1 cake and spread
with Plain Stabilized Whipped Cream.
3. Line the strawberries on the cream.
4. Top with more cream.
5. Place another chocolate cake layer
over.
6. Repeat with strawberries and cream.
7. Place the last chocolate cake over
and press down a little to compact the cake.
8. Refrigerate for 10 minutes to set.
9. Cover with Sweet Whipped Cream,
using a dessertspoon to make dents as decoration.
10. Chill and serve.
How was it?
- the chocolate cake was too dry as was the Bailey's Chocolate Cake
- but the combined taste with the cream is pretty good - light (unlike those creamy cakes sold in stores)
- my momma says I ought to learn proper cake-making skills cos my cake just doesnt look presentable. well, that's true so I'll work on that !
Better it up!
- improve on the looks of the cake
- use another cake base (perhaps a madeira cake)
