INGREDIENTS (RED VELVET)
- 1 cup (205g) sugar
- ½ cup (90g) margarine
- 2 eggs, RTP
- 2 cups (250g) cake flour
- 1/3 cup (25g) oats
- 2 tbsp cocoa
- 2 tsp baking powder
- 1 cup (220ml) buttermilk
- 1 tbsp red food coloring
- 1 tsp distilled white vinegar
INGREDIENTS (CREAM CHEESE FROST)
- ½ cup (90g) margarine
- 230g cream cheese
- 1 cup icing sugar
METHODS
- Preheat oven to 175ÂșC.
- In a large bowl, cream margarine and sugar with an electric mixer for 3 minutes till light & fluffy.
- Add in the eggs 1 @ a time & beat till each is incorporated in well.
- In a medium bowl, sift all the dry ingredients.
- In a small bowl, whisk the buttermilk, vinegar and red food coloring.
- Add ¼ of the dry mix to the margarine mixture, mix and add 1/3 of the red mixture.
- Continue adding in this manner: dry, red wet, dry till it ends with the dry mixture.
- Scoop into papercups about ¾ full.
- Bake for 20 minutes.
- Let rest for 5 minutes before turning out onto a wire rack.
- Meanwhile, make the frosting.
- Cream the margarine and cream cheese.
- Add in the icing sugar and whizz till smooth.
- Spread onto red velvets.
