Red Velvet Cuppy Cakes (A)

INGREDIENTS (RED VELVET)
  • 1 cup (205g) sugar
  • ½ cup (90g) margarine
  • 2 eggs, RTP
  • 2 cups (250g) cake flour
  • 1/3 cup (25g) oats
  • 2 tbsp cocoa
  • 2 tsp baking powder
  • 1 cup (220ml) buttermilk
  • 1 tbsp red food coloring
  • 1 tsp distilled white vinegar
INGREDIENTS (CREAM CHEESE FROST)
  • ½ cup (90g) margarine
  • 230g cream cheese
  • 1 cup icing sugar


METHODS
  1. Preheat oven to 175ÂșC.
  2. In a large bowl, cream margarine and sugar with an electric mixer for 3 minutes till light & fluffy.
  3. Add in the eggs 1 @ a time & beat till each is incorporated in well.
  4. In a medium bowl, sift all the dry ingredients.
  5. In a small bowl, whisk the buttermilk, vinegar and red food coloring.
  6. Add ¼ of the dry mix to the margarine mixture, mix and add 1/3 of the red mixture.
  7. Continue adding in this manner: dry, red wet, dry till it ends with the dry mixture.
  8. Scoop into papercups about ¾ full.
  9. Bake for 20 minutes.
  10. Let rest for 5 minutes before turning out onto a wire rack.
  11. Meanwhile, make the frosting.
  12. Cream the margarine and cream cheese.
  13. Add in the icing sugar and whizz till smooth.
  14. Spread onto red velvets.

Fill cups till 3/4 full


Adorn with cream cheese frosting on top
