Madeira is a spongecake in traditional English cookery.
INGREDIENTS
- 185g unsalted butter, softened
- 170g caster sugar
- 3 eggs, lightly beaten
- 2 teaspoons finely grated orange zest
- 155g self-raising flour, sifted
- 125g plain flour, sifted
- 2 tablespoons milk
METHODS
- Preheat oven to 160°C and line a loaf tin (7 x 10 x 20 cm) with baking paper.
- Cream butter and sugar in a large bowl till light and fluffy.
- Add the egg gradually and beat thoroughly after each addition.
- Add orange zest and beat until combined,
- Use a metal spoon and fold in the flour and milk.
- Stir until smooth and spoon mixture into tin.
- Smooth the mixture surface and bake for 70minutes (until skewer comes out clean).
- Cool cake in tin for 10minutes before turning out to a wire rack to cool completely.
