these babies were baked spontaneously,
& you can have them feeling a little less guilty,
for they're made of things good for your body,
& are also pretty yummy!

Makes 15 muffins
Ingredients
- 2 bananas (medium), mashed
- 1 egg
- 1/4 cup soyabean oil
- 1/3 cup milk + 1/2 cup milk
- 1/3 cup sugar
- 1 cup plain flour
- 1 3/4 cup instant oats
- 1 teabag leaves (mango & strawberry flavoured), optional
- 3 teaspoons baking powder
- 4 teaspoons flaxseeds
- 1/2 cup chocolate chips
Methods
1. Preheat oven to 175 degree C and line/grease 15 muffin tins.
2. Combine bananas, egg, oil and milk in a bowl, mixing well.
3. Sieve in the flour, baking powder and tea leaves.
4. Stir in the oats.
5. Beat until well-combined.
6. Stir in the flaxseeds and chocolate chips.
7. Fill each muffin tin with batter until 3/4 full.
8. Bake for 25 - 30 minutes until muffin tops are browned.

How was it?
taste was interesting - fruity in every way possible; the mashed bananas and tea leaves were a tad overwhelming on the taste. the chocolate chips in between the bites were delicious (everyone loves chocolate chips eh). for a muffin baked with that much oats, i'm impressed that the texture turned out cakey instead of the usual "kueh" like texture when you add too much of a good thing such as oats...wholemeal flour & yogurt. a little dense and dry so enjoy it for a quick breakfast with a glass of low-fat milk !
Better it up!
Instead of a fruit-based tea, use vanilla tea leaves instead.
