A spontaneous bake because I wanted to use up a box of chocolate chips that has been sitting in my pantry for too long.
This would make a hearty guilt-free light breakfast or snack, here goes..

Makes 21 muffins
Ingredients
- Oats, instant, 1/2 cups (130g)
- Flour, plain, 2 2/3 cups (330g)
- Sugar, half of 2/3 cup (93g)
- Baking powder, 3 teaspoons
- Salt, a pinch
- Eggs, 2, beaten
- Milk, low-fat, 1 1/2 cups (350ml)
- Olive oil, extra light, 1/2 cup (120ml)
- Chocolate chips, 200g
- Rolled oats, to top
Methods
1. Preheat oven to 180°C.
2. Line 21 muffin cups.
3. Sieve flour, baking powder and salt.
4. Combine flour mixture, oats and sugar - mix well.
5. In another mixing bowl, mix the eggs, milk and oil.
6. Create a well in the flour mixture and pour in the liquid, mixing until well-combined.
7. Stir in the chocolate chips.
8. Fill each muffin cup until 2/3 full and sprinkle some rolled oats on top.
9. Bake for 20 minutes or until lightly golden brown (not too long otherwise the chips will burn).
Enjoy it with a glass of low-fat milk !
How was it?
Compact/hard and dry...but.... the chocolate chips saved it. A guilt-free muffin snack!
Better it up!
Add 1/2 cup - 1 cup of low-fat milk.
Try adding cocoa powder for a double chocolate chip muffin.
