Coffee banana muffins.
Mix the sifted flour-cocoa mixture and coffee grounds together.

Use a fork to mash the banana |

Mashed banana |

Use a whisk for the egg |
|
Whisk the egg till frothy |
|
Add in sugar to the frothy egg |
|
Pour in the melted (& cooled) margarine |
|
Add in the mashed banana |
|
Stir in the flour (& raisins) |
|
Add in the milk and stir well. |

Fill 8 muffin tins till full |

Ingredients
- Self-raising
flour, 190g
- Margarine,
reduced-sodium, 60g, melted
- Egg,
1, beaten
- Raisin,
40g
- Sugar,
90g
- Cocoa,
2 tsp
- Milk,
low-fat, 55ml
- Banana,
1 big (125g), mashed
- Coffee
ground, 1 tbsp
- Chocolate
chips, to sprinkle
Methods
- Preheat
oven to 200ÂșC.
- Sift
the flour and cocoa.
- Stir
in the coffee grounds and set aside.
- Whisk
egg till frothy and whisk in sugar.
- Stir
in melted margarine and mashed bananan.
- Stir
in flour and raisins.
- Stir in the milk.
- Fill
muffin tins till full.
- Sprinkle
with chocolate chips.
- Bake
for 20 minutes.
- Remove
from oven and cool on wire rack immediately.
