Bars of Lemonsin is akin to shortcakes - a sweet biscuit that originated from America.
Lemons are known for its good source of vitamin C...
however , the high heat of the oven would have destroyed whatever vitamin C there is.
Nevertheless, the lemons do retain a 'tart' taste to counter the possibly overwhelming sweetness in this dessert.

Makes 12 Bars
INGREDIENTS:
Base
225g plain flour
100g sugar
175g butter, firm & cut into small cubes
Topping
3 eggs
200g sugar
100ml lemon juice (~2 lemon)
Lemon rind from 3 lemons
40g flour
75g raisins
METHODS:
- Preheat oven to 180ºC.
- Line a square tin with baking paper.
Making the base…
- Mix the flour and sugar well in a large bowl, add the butter and rub till the mixture resembles breadcrumbs.
- Press the mixture into the tin and bake for 20-25 minutes (till golden brown).
- Remove the tin and reduce the oven temperature to 140 ºC.
Making the topping..
- While the base is in the oven, whisk the eggs with sugar using an electronic mixer until thick and pale (depending on the speed and type of beater, time varies, I took about 5 minutes on high speed).
- Stir in the lemon juice, rind and fold in the flour.
Preping the bars for the oven..
- Sprinkle the raisins over the base and pour the egg mixture over.
- Bake for 40 minutes until the mixture sets.
- Cool in tin for 20 minutes before cutting out the bars.
Remarks:
- too sweet, reduce the sugar used for the topping
