was craving for some oreo and cake,
so I thought why not combine them in a bake?
voila! here's my take,
on an oreo muffin for your coffee break,
or a delish breakfast muffin that might entice you to wake!
Makes
12 muffins
Ingredients
- 1 1/3 cup (185g)
plain flour
- 1/3 cup (40g) wholemeal flour
- ½ + ¼ teaspoon baking powder
- pinch of salt- 140g sugar
- 120g butter, melted
- 1 egg
- 1 cup (250ml) low fat milk
- 13 oreo cookies (12 for muffin tin, 1 to crush and sprinkle as topping)
- 1/3 cup (40g) wholemeal flour
- ½ + ¼ teaspoon baking powder

1. Preheat oven to 175dc and line 12 muffin tins, placing an oreo at the bottom of a muffin tin.
2. Sieve flour, baking powder, baking soda and salt into a bowl.
3. Stir sugar into melted butter (you will get a gritty mixture).
4. Stir in egg and milk until smooth.
5. Stir dry ingredients into the wet mixture until well combined.
6. Pour the batter over the oreo until almost full.
7. Sprinkle some oreo crumbs over the top.
8. Bake for 20 - 25 minutes.

How was
it?
Muffins were slightly dense and kueh-like, instead of the usual cakey muffins. The balance of sweet and savoury (saltiness from the salt and a tinge of it from the oreo) was perfect especially with the surprise oreo cookie at the bottom!

Better it
up!
I wanted to whip these up in a quickie so I used a whisk for mixing. To use a beater instead, could incorporate more air during mixing for a more cake-like texture. Increase baking powder to 2 teaspoons for more aeration.
