Financiers



Financiers are small french cakes which usually contain ground almonds.

It is similar to the friands (check em' out here) which are available in many flavours... & are a hit in Australia & New Zealand.




Sift the dry mixture two times

Measure out the sugar & almond ground

Place egg whites in clean bowl.
Whisk till frothy.
Add sugar and whisk well till foamy.

Mix in the ground almonds, vanilla and dry-ingredient-mix.
Mix well after adding each.
Voila, a sticky batter.

Clarifying the butter (end-product should be more brown than that)


Skim the fats off the top of the clarified butter

Mix the butter into the egg-white-mix
Fill the moulds with batter, 1/3 full...to bake !

Ingredients
  • Cake flour, 50g
  • Corn flour, 5g
  • Baking powder, ½ tsp
  • Egg Whites, 3
  • Sugar, 100g
  • Almonds, ground, 60g
  • Vanilla essence, ½ tsp
  • Salt, a pinch
  • Butter, unsalted, 130g

Methods
  1. Preheat oven to 220ÂșC.
  2. Grease 8 small oval moulds.
  3. Sift all the dry ingredients (except sugar and almonds), two times.
  4. Place egg whites in a clean bowl and beat lightly.
  5. Add sugar, mix well.
  6. Add almonds, vanilla and dry-ingredient-mix, mix well after adding each ingredient.
  7. Clarify the butter by heating it in a saucepan over medium-low heat* until it turns golden brown.
  8. Immediately lace the saucepan in a cold-water-bath to stop the cooking of butter.
  9. Skim off the fats from the top of the butter.
  10. Mix butter with the egg-white-mix and stir well.
  11. Pour batter into moulds, filling 1/3 full and bake for 15 minutes.
  12. Remove and cool on wire rack.
  13. Serve!

* the butter was not clarified very well here, might need to take 30-40 minutes for it to turn golden-brown.
